Don’t let the name confuse you here:
Tenderloin is the fillet – the small, lean section of muscle that runs along the backbone section.
The loin is found in various guises but is usually cut into three sections:
The blade ; the centre, which makes good roasts and can be cut into loin steaks and chops; and the sirloin which is great for roasts, chops and boneless steaks.

MARINADE
¼ cup brown sugar
¼ cup fish sauce
6 cloves garlic, chopped
2 tablespoons maple syrup
Freshly ground black pepper
6 stalks lemongrass, white bits only and finely chopped
COOKING INSTRUCTIONS
Mix all the marinade ingredients in a large zip seal bag and place the chops inside. Marinate overnight.
Remove chops from sauce and chargrill or grill, flipping them once, until caramelised and slightly charred (about 6-7 minutes a side). Rest for 8 minutes before serving.
